SRG Hospitality has opened Ripples Rose Bay at Rose BayMarina, bringing the group’s signature waterfront dining to one of Sydney’s most beloved harbour addresses.

The newest venue in the Ripples portfolio, which has been part of Sydney’s waterfront since the original Milsons Point site opened in 2002, Ripples Rose Bay is designed to become a neighbourhood staple.The kitchen is led by executive chef Marco Masotti, formerly of Sella Vinoteca and A Tavola. The modern Australian menu has been designed to reflect the waterfront setting. Sydney Rock oysters, Australian prawns and locally sourced whole fish feature prominently alongside a slow-roasted lamb shoulder, whole seafood presentations and fish and chips

 

“We want dishes to feel generous, fresh and approachable. Strong execution and clean flavours, rather than overcomplicating the food,” said Masotti. “The waterfront location reminds me of some venues I worked at overseas, where the seafood is king. We want to create food connected to the location to offer the best experience for our guests.” The beverage list focuses on Australian producers, with an emphasis on bright whites, textural rosés and lighter reds suited to the harbour setting. Ripples Rose Bay is also BYO. The cocktail program keeps it coastal, with highlights including ‘The Bay’ a signature vodka cocktail layered with green apple, extra virgin olive oil, bay leaf, and the ‘Ripple Effect’, a lighter expression of an espresso martini featuring a classic rum, coffee liqueur, macadamia, and coconut.

The design was led in-house by SRG Hospitality creative director Perry Drakopoulos, continuing the design language established across the Ripples portfolio, with timber, bamboo trusses and natural materials that lean into the light and water rather than compete with them. A private dining room accommodates up to 25 guests and extends onto its own balcony overlooking the harbour. Every seat in the main dining room has a water view. “We talked about the barefoot test,” said Drakopoulos. “It’s a place you can arrive barefoot for breakfast, lunch or dinner and still feel entirely comfortable.” The kiosk will operate all day, offering coffee, takeaway and lighter options for people moving through the marina. The main venue will serve breakfast, lunch and dinner.
