I never imagined that I would get excited about dining on Ravioli ,.but the  Thai Fusion Ravioli that I recently tried in Thailand really is a whole new ball game ,.after an invitation Angwara Poolsawat (Apple) to attend the Thai Fusion Ravioli Dinner with Matching wines at the Monsoon Valley Wine bar in Hua Hin.

It is absolutely amazing what is going on on Thailand which  one of the world’s most exciting culinary destinations with some amazing Fusion influences  happening,..So I went to Homemade Ravioli pasta in a Thai Fusion paired with Monsoon Valley fine wines . We enjoyed  5 different pasta parcels stuffed with Thai classic recipes and paired with 5 different wines  .We were welcomed with a glass of Sa dry elegant well made Monsoon valley Sparkling wine.

As epicures around the world know,..Italian cuisine offers an abundance of taste, and is one of the most popular and copied around the world. The cuisine has influenced several other cuisines around the world, chiefly that of the United States.

Traditional Ravioli  are a type of pasta comprising a filling enveloped in thin pasta dough. Usually served in broth or with a sauce, they originated as a traditional food in Italian cuisine. Ravioli are commonly square, though other forms are also used, including circular and semi-circular (mezzelune).

History

Ravioli are mentioned in the personal letters of Francesco di Marco Datini, a merchant of Prato in the 14th century.In Venice, the mid-14th-century manuscript Libro per cuoco offers ravioli of green herbs blanched and minced, mixed with beaten egg and fresh cheese, simmered in broth and seasoned with “sweet and strong spices”.In Rome, ravioli were already well known when Bartolomeo Scappi served them with boiled chicken to the papal conclave of 1549.

Ravioli appear in the 14th-century cookbook The Forme of Cury under the name of rauioles. Sicilian ravioli and Malta’s ravjul may be older than North Italian ones.Maltese ravjul are stuffed with irkotta, the locally produced sheep’s-milk ricotta, or with gbejna, the traditional fresh sheep’s-milk cheese.

Traditionally, ravioli are made at home.

The filling varies according to the area where they are prepared. In Rome and Latium the filling is made with ricotta cheese, spinach, nutmeg and black pepper. In Sardinia, ravioli are filled with ricotta and grated lemon rind.  Today Modern ravioli are also mass-produced by machine

In Europe and the United States, fresh-packed ravioli have several weeks of shelf life.

Ravioli are commonly encountered in the cooking of Nice, the broader Côte d’Azur, and the surrounding regions in the south of France. The contents of these vary greatly, but most idiosyncratic to the region is the use of  daubed minced meat. Miniaturized cheese-filled ravioli, locally called ravioles du Dauphiné, are a specialty of the Drôme department in the Rhône-Alpes region, particularly the commune of Romans-sur-Isère, and are frequently served au gratin

SIGNATURE RANGE BRUT PRESTIGE SPARKLING WINE –Grape variety Colombard ,Delicate stone fruit aromas with a touch of Lemony and citrus nuance On the palate there is vibrant fuit and crip acidity .Some residual sugar balancing the acidity and fibrant fizz yet enhancing the fruit.
