OYSTER RECIPES FROM ALMA RESORT VIETNAM

 

Sydney Times Publisher  and Connoisseur Magazine Wine Food & Tavel editor Axel Ritenis recently had the opportunity to visit one of the great Beach Resorts in Vietnam the Alma Resort Cam Ranh,..which literally has it all for a Family Holiday ,..including 12 Restaurants and 10 massive Swimming Pools cascading down to the ocean beach  and he managed to extract the Alma Resorts Secret Oyster Recipes from the management.

These are the easy to prepare  and delicious Recipes used in the resorts ATLANTIS Beach front restaurant at Cam Ranh Bay ,Vietnam.

 

OYSTERS BAKED WITH CHEESE

Ingredients:
– Oyster, 2pcs
– Butter, 20gm
– Milk, 20ml
– Flour, 5gm
– Mozzarella cheese, 5gm
– Salt to taste
– Peper to taste
-Nutmeg to taste

Instructions:
1. Heat the pan and add the butter.
2. Add the flour and stir until the flour is cooked and fragrant.
3. Add fresh milk and stir well to get a smooth sauce mixture.
4. Add nutmeg powder and turn off the heat.
5. Pour the cooked sauce mixture onto the oysters, then sprinkle cheese on top.
6. Bake in the oven at 200 °C for 5 minutes.

GRILLED WITH SATAY SAUCE

Ingredients:

– Oyster, 2 pcs
– Peeled Shallot peeled, 10gm
– Chili sauce, 5gm
– Shrimp satay sauce, 10gm
–  Sugar, 5gm

Instructions:
1. Heat the pan and fry the minced shallot.
2. Add all the remaining ingredients to the pan and stir well to get the satay sauce mixture
consistency.
3. Pour satay sauce over the oysters and grill at 200°C for 5 minutes.

 

GRILLED WITH BUTTER EGG SAUCE

Ingredients:
– Oyster, 2pcs
-Egg Yolk, 2pcs
– Butter, 5gm
– Salt to taste
– Peper to taste

Instructions:
1. Put the egg yolks and butter in a stainless-steel bowl and whisk until the sauce is smooth.
2. Add salt and pepper.
3. Pour the egg-butter sauce mixture over the oysters and bake at 200°C for 5 minutes.

GRILLED WITH BUTTER GARLIC SAUCE

Ingredients:
– Oyster, 2pcs
– Butter, 40gm
– Garlic, 5gm
– White wine, 5ml
– Parsley, 2gm
– Chives, 2gm

– Salt for taste
-Pepper for taste

Instructions:
1. Heat the pan, then add half the butter and minced garlic.
2. Stir well until the garlic is cooked and fragrant.
3. Pour the wine into the pan, then add all the ingredients and the remaining butter.
4. Stir well to get the garlic-butter sauce mixture consistency.
5. Pour garlic butter sauce over oysters and bake at 200°C for 5 minutes.

 

 

 

Alma Resort Camh Ran Bay, Vietnam

GRILLED WITH ONION AND PEANUT SAUCE

Ingredients:

– Oyster, 2pcs
– Spring onion, 50gm
– Cooking oil, 20gm
-Peanuts, 5gm
-Salt to taste

Instructions:

1. Heat the oil, then add the finely chopped green onions. Season to taste.
2. Grill the oysters at 200°C for 3 minutes.
3. Pour the green onion sauce on the oysters and continue grilling for 2 minutes.
4. Take the oysters from the grill and sprinkle roasted bean powder on top.

TAKE THE FINISHED OYSTERS AND SET ON A PLATE AND ENJOY WITH A NZ SAUVIGNON BLANC WINE OR FRENCH CHABLIS OR EVEN  PICPOUL PINET!
