  • Warm Sourdough Roll with Cultured Butter: An essential comforting touchstone, featuring a beautifully blistered crust and a deep, lactic tang in the whipped butter.

The Wine Match: To mirror the bright, maritime notes of the crudo and dip, guests enjoyed the BiancaVigna Prosecco Brut DOC from Italy’s Veneto region. Brilliant straw-yellow with a fine, persistent bead, it delivered crunchy green apple, stone fruit, and jasmine aromatics with a wonderfully creamy, bone-dry finish that cut beautifully through the richness of the Barramundi roe.

  • Whole Lamb Shoulder with Mint Salsa and Jus: The absolute star of the show. Slow-cooked until entirely collapsing at the touch of a fork, the rich, deeply caramelized lamb fat was cut precisely by a vibrant, herbaceous mint salsa and a glossy, intensely concentrated natural reduction.

When the lamb shoulder arrived, it was met with a 2024 Right bank SHIRAZ  Barossa Valley South Australia,—a bold, dark-fruited, and peppery expression that possessed the muscular tannins and velvety depth necessary to match .the unctuous intensity of the slow-roasted lamb,..which was every bit as good as the legendary tales about Matt Moran’s Farm to Table Lamb suggested it might be.

Dessert: A Native Australian Finale

The luncheon concluded on a sophisticated, bittersweet note with a dessert that paid homage to indigenous ingredients:

  • Dark Chocolate & Wattleseed Tart: A flawlessly short, cocoa-rich pastry shell filled with a decadent, velvety dark chocolate ganache. The inclusion of roasted wattleseed introduced a sublime, complex undertone of nutty, coffee-like, and chicory notes, grounding the sweetness of the chocolate.
