Perched high above the dazzling vistas of Darling Harbour, Zephyr Sky Bar’s rooftop is transforming into a Mezcaleria in the sky where guests will be able to bask in the bar’s signature skyline elegance infused with Latin flair. Inspired by the colour, craft, and culture of Mexico in particular, the sun-drenched summer escape is bringing to life the vibrant world of agave. While sculptural succulents spill from terracotta pots, and bursts of pink and orange décor, mosaic- tiled walls, and beautiful lighting create an oasis of colour and energy – inviting guests to be transported to a summer’s night in the heart of Mexico.
To celebrate the partnership, the new Zephyr Sky Bar x Don Julio Rosado cocktail collection showcases handcrafted tequila creations that celebrate the best of both worlds – pairing bold Don Julio Rosado expressions with seasonal Australian ingredients for a sensory escape at luxurious heights, unlike any other.
Featured in five bespoke celebratory cocktails, the deliciously unique reposado tequila with its delicate pink hue makes it the perfect focus of the limited-edition cocktail menu, which includes: a pink shaved ice sip called The Frosado – Crème de Pamplemousse, citrus, grapefruit, the spicy Fire and Tide – mezcal, jalapeno syrup, tabasco, citrus, Blue Paloma – kumquat cordial, blueberry puree, Fever-Tree Grapefruit Soda, the mouth-watering Midnight Rose – Green Chartreuse, citrus, rose syrup, and Don Juliet – Massanez Crème de Violette, Peychaud’s bitters, citrus, blackberries.
Complimenting the cocktails is a new summer dining menu from Zephyr Sky Bar. Designed to pair beautifully with all sips on offer, the menu continues to highlight premium local produce and Mexican flavours, including Beef Barbacoa Sliders, Snapper Ceviche, Flathead Fiesta Tacos, and Cheese Empanadas. These bites are ready to enjoy, and perfectly suited to Sydney’s balmy evenings and the rooftop’s vibrant alfresco atmosphere.
