From a single Parramatta restaurant to a chicken tender sensation: Pappa Flock revamps O.G. store

-Named one of Australia’s top start-ups, the Parramatta chicken chain is honouring its roots with a 50% off relaunch event and new ‘Crunch of Fame’ tribute to its day-one crew

After taking the East Coast by storm, Pappa Flock is bringing the magic back to where it all began, officially relaunching its very first store in Parramatta after a top-to-bottom revamp.

To celebrate the reopening on Friday, 17 April, the crew is throwing a welcome-back party with 50% off the entire menu for one day only. Adding to the celebrations, local NRL legends and podcast hosts Willie Mason and Justin Horo will be dropping by between 4.30-6.30pm to meet fans, serve some chicken, and join the festivities.

Pappa Flock comes from humble beginnings. It all started in Parramatta in 2023, driven by a small crew determined to do fried chicken tenders better and fresher. Twelve stores and two states later, the brand’s explosive growth isn’t slowing down.

“Pappa Flock wouldn’t be the success it is without Parramatta. This reopening is about celebrating a homegrown business with the locals who supported it from day one,” said Rachel Korbel, Chief Marketing Officer at Pappa Flock. “The exponential growth we’ve experienced has meant the brand has evolved, and it’s time our very first store reflects that growth. We want it to be celebrated as the O.G. store that made it all happen.”

The fit-out introduces a brand new ‘Flavour Up’ condiments station. Designed to let customers enjoy every flavour profile – sweet, sour, and spicy – the self-serve station is fully stocked with honey, pickle combo, spicy pickles, spicy seasoning and hot sauce for the ultimate customisation.

“We wanted to add a special feature to the O.G. location that delivers on our commitment to create the best chicken tender experience, every single time. With the new “Flavour Up” station, Flockers can layer up every dish with their favourite pickles and sauces, completely on the house,” shared Korbel.

The restaurant features the brand’s now-iconic disco balls and a custom mural from local artist Brent Smith, but the most meaningful addition is the brand new ‘Crunch of Fame’ floor.

“We are absolutely nothing without our crew,” Korbel added. “To honour the O.G. Parramatta crew who are still with us today, we surprised them with their own permanent plaques in the ‘Crunch of Fame’ floor. Seeing the names of Vill, CJ, Shaamal, Laura, Chell, and Taylan embedded in the restaurant is a special way to say thank you.”

While the store has a fresh new look, Pappa Flock’s commitment to fresh, hands-on preparation is exactly the same as day one.

“Real crunch takes real work. From hand-breading our chicken tenderloins every morning to hand-squeezing 2,500 lemons in every restaurant, every day, our approach hasn’t changed,” explained Head Chef Eddie Cofie.

Finding that perfect recipe was a labour of love. Every batch taught Cofie something new about the seasoning, crunch, and balance of flavours, finally landing on Pappa Flock’s now-iconic crispy, juicy chicken tender.

“We lost count of the exact number of recipe iterations, which is a testament to how seriously we took the development process,” Cofie shared. “In total, it took four months of relentless refinement because we refused to put our name on the product until it was perfect. Every batch taught us something new about the seasoning, crunch, and balance of flavors until we finally achieved the right result. Our lemonade was developed shortly after. We adjusted the recipe multiple times over six weeks, using blind tastings and customer feedback to help us land on the freshly-squeezed lemonade on the menu today.”

Pop by the Parramatta re-opening on Friday, 17th April from 11am and enjoy 50% off the entire menu and between 4.30-6.30pm to meet local NRL legends and podcast hosts, Willie Mason and Justin Horo.

Parramatta locals can look forward to the full menu of Flock favourites, including Flock Boxes, handcrafted sandwiches, loaded wraps, iconic house-made lemonade and the signature sauce.
